the quick n yummy --chicken fideo

this is definitely a throwback to my childhood. my aunt and grandma used to make this dish for lunch once in a while. 'course it's darn near impossible to replicate the exact same taste...but hey, i had fun.

it's a simple dish, for the lazy such as yours truly. i come home from work, and i don't wanna drive off again to hit the local cafe for dinner. i just wanna make something other than a sandwich, but want it to be something that won't be too annoying for cleanup. total dishes/tools used: 3. One frying pan, one cutting board, and a knife.

fideo can be found in most stores--it's super thin pasta cut into short pieces and cooks quite fast. similarl to spanish rice, you sautee the pasta first, then simmer with water and tomato sauce.

it's one of those dishes where you can be as creative or boring as you'd like. so here are the basic ingredients:

- pack of fideo noodles (i'm cooking for one, so i used half of a little bag).
- 1/3 of a small can tomato sauce
- 1/2 cup water
- diced onions, green peppers, and minced garlic
- 1-2 oz meat of some sort (if you'd like)
- pepper, salt, or any other flavor that tickles your fancy.



so very simple. in a medium skillet, fry up your veggies 'til they smell good. Add your fideo, and sautee those 'til they're slightly browned. There's a very distinct flavor when they're slightly browned (and not burned of course). When you feel everything has sauteed nicely, add about a half cup of water, tomato sauce, and your meat (optional). Cover and let it simmer on low heat for 5-10 minutes. Fideo cooks pretty fast, so don't walk off and do laundry or something.



At this point, you can taste and experiment with your salt, pepper, etc. This time, I added pepper and a tiny bit of chili powder, just 'cause I like that lil bite. I also shredded some sharp cheddar cheese and put that in at the end, but I'm a cheese fiend, so that's another preference thing.

Total cook prep time: 10-15 minutes.

So go at it, and experiment with whatever tastes good. Fideo is a great side dish or a stand alone quick meal for those who get sick of ramen and sandwiches. = )
